35 year old vines, from a plot selection called “Le Désert du Petit Bannon” located in the commune of Vinon. Soils are of clay-siliceous with lots of flint pebbles. Direct pressing with cold static settling for 4 days, must is then barreled into 400L barrels where it undergos fermentation with natural yeasts. Aging for 12 months in the same barrels then 6 months in stainless steel vats.
