Grüner Veltliner from Acadia Vineyard in the Columbia Gorge AVA. Acadia is a certified organic and dry-farmed site planted at 1300' elevation above the Columbia River on volcanic soils, just northwest of Hood River.on the Washington side of the AVA. Following a primary and secondary fermentation in tank, the resulting wine was clean and very low alcohol, but was a rather neutral representation of Grüner Veltliner. Mike Hinds decided to add a single sulfur addition, rack, and move the tank outside where a layer of flor developed quickly and remained throughout the summer. The resulting wine developed the honeyed
and nutty qualities characteristic of flor aging, and was bottled without fining or filtration. 9.9% abv (0g/l of RS).
