In 1989, Alice and Olivier started an estate in the village of Courgis, near Chablis, by planting two plots of Chablis, Bel Air and Clardy, of which they make a single cuvée. They now also work a plot of Chablis called Rosette, a plot of Bourgogne in Chitry, various parcels planted with Aligoté, and Sauvignon Blanc in St-Bris. Their vineyard work is organic, with biodynamic preparations, and nothing is added to the wines during winemaking, except for a touch of SO2 at bottling time to preserve the wine.
