2020 marks the first edition of the Pet-Nat.  The idea with this wine is that it could change from year to year, depending on what a given season offers.  The grapes may change, and therefore the style and the color.  For the 2020, it is 60% Trebbiano Toscano (macerated for 2-3 weeks on the skins) and 40% Verdicchio, pressed white.  The two wines are combined once they finish their first fermentation.  A secondary fermentation is triggered in bottled using unfermented must and the bottle is not disgorged.
