100% Cabernet Franc. The vieilles vignes in this case are estate vines ranging from 50 to 100 years old and scattered across a range of parcels on clay-limestone soils. The farming is certified-organic and is in conversion to biodynamics. The bunches are harvested by hand and fully destemmed for fermentation with native yeasts in stainless steel tanks and a 10-day maceration. The wine is aged in steel for a year.
