50% Côt/50% Grolleau. This méthode ancestrale rosé is Pinon's only non-Chenin wine, made from black grapes planted by François Pinon's father in order to supply their vineyard workers with red wine. The parcel is just 0.4 hectare in size, so production is small, if it happens at all (as it did not, for example, in the frost-stricken 2021 vintage). The juice ferments spontaneously with native yeasts for around 2 weeks and is bottled, finishing dry about 2 weeks later. The bottles are disgorged in the spring after the vintage and receive zero dosage.

"The 2022 “Pétillant Naturel” Rosé from Julien Pinon is made from a fifty-fifty blend of Grolleau and Côt. It is a beautiful salmon color and offers up a vibrant and impressively complex bouquet of watermelon, white cherries, lovely minerality, dried rose petals, orange peel and a lovely patina of gentle spice tones in the upper register. On the palate the wine is bright, full-bodied and gently frothy, with a good core of fruit, fine acids and a long, complex and very nicely balanced, bone dry finish. This is very, very good juice. 2024-2035. "
