"The Corpinnat sparkling white 2019 Hermós is the last great vintage in Penedès for them, a more complete year than 2018. It was produced with a blend of 72% Xarel.lo and 28% Sumoll (red) from their village, the grapes they use for their wines and what makes sense for them, from vineyards that are farmed organically and planted on limestone-rich soils poor in organic matter. The two varieties fermented together with indigenous yeasts in stainless steel, where the wine matured with the lees for five months before it was put to referment in bottle, where it aged with the lees for 33 months. It's a brut nature with 12.5% alcohol and a pH of 2.95. It has a very elegant and harmonious nose and a balanced, fresh and lively palate, with pungent acidity from Sumoll, textured and tasty with the mouthfeel from the limestone and clay soils, finishing with a chalky sensation. It's a serious wine, coming from people who are used to making still wines, produced with the same concept. 6,588 bottles produced. It was disgorged in January 202"
