Barro de Cobre
- Rio Ejutla, Oaxaca, Mexico
Mezcal Barro de Cobra mezcal originates in Rio Ejutla, Oaxaca, Mexico. Mezcal Barro de cobre espadín is the first mezcal that proposes the assembly of distillation processes, distilled in clay pots and distilled in copper pots. It is a spirit made with maguey espadín by the master mezcaleros Adrían and Lucio Bautista in Río Ejutla , Oaxaca. The emergence of the Barro de Cobre brand is the result of a long search for a unique distillate combining tradition and modernity. It all started in mid-2014, when Bernardo Senger, the brand’s creator, visited several Mexican states to find the best place to implement his project. To his team, he invited the hereditary producers of mezcals, Adrian and Lucio Bautista. Bernardo's idea was to create mescals by double distillation - in clay pots and in copper cubes. First, mezcal is distilled in clay pots with a volume of 30 liters, and then in copper alambiks with a volume of 500 to 600 liters. All Magueys are grown using organic processes. Once harvested, the piñas are cooked in the traditional manner in outdoor stone concave pits giving them their earthy and smokyqualities. It is then ground by a tahona stone using oxen to turn the wheel to create the bagaso which is later fermented in large wooden tanks using only native yeasts and later distilled in clay and in copper. The production of one bottle of mezcal takes 504 hours. Each bottle is filled and labeled manually. Today the company produces 2 types of mezcal - Espadin Joven and Espadin y Tobala Joven
