2021 is the second edition of the Pet-Nat.  The idea with this wine is that it could change from year to year, depending on what a given season offers.  The grapes may change, and therefore the style and the color.  For the 2021, it is 70% Verdicchio, 15% Sangiovese, and 15% Pinot Noir.  The two red grapes went through a pre-fermentative carbonic maceration for about ten days, after which they were fermented as rosè wine.  A secondary fermentation is triggered in bottled using unfermented must and the bottle is not disgorged.

The Pinot Noir was purchased from an organic grower in their village, Cupramontana.  He then sold this vineyard to another estate, so Ca'Liptra had access to these grapes just once!
