100% Chenin Blanc. "L'Effraie" is from Bellivière's younger Coteaux du Loir vines, across 11 parcels totaling 3.5 hectares. These gobelet-pruned, 10-30-year-old vines are planted on flinty, sandy clay soils over tuffeau (soft limestone), are certified-biodynamic and harvested by hand. The bunches are direct-pressed into tank and the juice allowed to settle overnight; it is then moved by gravity into barrels for fermentation with native yeasts and minimal sulfur. The wine is aged in these 1-3-year-old, 350-liter barrels, with a small proportion of new ones in any given year, for about a year. The 2021 finished at a sec level of sweetness with just 3.9 grams/liter of residual sugar.
