Vino Rosso "Lavigna"
100% Croatina. 2020 is the second vintage of this very small bottling from Santuvario. The organically farmed vines lie entirely in the Boca DOC at 400-460 meters on volcanic soils in a south-facing amphitheater-like layout at the top of a hill. The vines range from 20 to 50 years old and are trained in a mix of the unique local "maggiorina" style (named for nearby village of Maggiora) and in guyot. Harvest is by hand and the yields quite low (20 hl/ha). The bunches are destemmed and fermented spontaneously with native yeasts in stainless steel with a one-month maceration. The wine is gently pressed into a 500-liter botte, where it aged for a minimum of a year, followed by another year of aging in bottle. Sulfur is used sparingly. The wine can only be as a Vino Rosso rather than DOC Boca because the appellation calls for a Nebbiolo-based blend aged at least 18 months in wood.
