95% Sauvignon Blanc/5% Chardonnay. For this entry-level white, Tue Boeuf sources fruit from organic-farmer friends around home in the Cher Valley. The vines average around 20 years old, are planted on a variety of clay-limestone soils and harvested manually by Tue Boeuf. The bunches are partly direct-pressed and partly destemmed with a short maceration. Fermentation is spontaneous with native yeasts in tank. The wine goes through malolactic fermentation and is aged on its fine lees in stainless steel without racking until bottling. The Vin Blanc is the only Tue B wine to be lightly filtered; only it and the Vins Rosé & Rouge see a very small touch of sulfur at bottling.
