92% Pinot noir and 8% Cinsault. Sourced from Pucalan and Larqui vineyards (about 10 acres total). Viñedo Larqui was planted in 1998 on paleozoic calcareous and sandy soils; Pucalan, planted in 2008, has granitic soil. Both are farmed lutte raisonée. After a 10-day cold soak, the wine was made in concrete and stainless; aged on the lees for 18 months and bottled lightly filtered.

"The 2020 Subsollum Pinot Noir comes through as serious and austere despite the warm vintage, with only 13.5% alcohol and good freshness. Only 15% of the wine matured in oak, and it only adds a faint note of spice. The vineyard was planted in 2007 with Burgundy selections of Pinot. It fermented with indigenous yeasts and matured in concrete and 15% in barrel. It's a different profile from the more approachable Pour ma Gueule, more serious. 9,786 bottles produced. It was bottled in March 2021."
