Petit Manseng 98%, and Sauvignon Blanc 2% from three vineyard sites, including Early Mountain's Estate Vineyard. Petit Manseng is very well suited to the heavy clay soils and humid climate of the area - retaining high acidity while accumulating sugar through the growing season. The wine was barrel fermented with ambient yeasts, aged in large format 500L to 1,000L barrels (15% new), and moved to stainless steel after 12 months (14 months total on lees).
