Les Enfers Blanc des Blancs (2016 base)
100% Chardonnay. 75% 2016 & 25% reserve wines. Les Enfers is a 0.62 hectare plot neighboring the Les Roises vines in Collin's home village of Congy in the northern Coteaux du Morin. The 45-year-old vines have eastern exposure (vs. the southern exposure of Roises) and are planted on similar clay and silex topsoils over limestone, the limestone being a stronger presence in Enfers. As for all Collin Champagnes, the fruit is hand-harvested, the clusters destemmed and the grapes gently pressed; the juice is fermented spontaneously and slowly (up to six months) with natural yeasts in mainly-used Burgundy barrels; reserve wines are held in foudres and tonneaux. The wine is bottled without fining or filtering and aged sur lattes for an extended period, 4 years in the case of Les Enfers, as for Les Roises. The wine is disgorged and finished with a dosage of 1-2 grams/liter at most.
