"Amelie Chatin’s Callipyge Blanc bottling is from her finest vineyard sites, with the vines
in excess of forty years of age and planted on gravel, clay and chalk. The cépages here is the same
fifty-fifty mix of sémillon and sauvignon blanc, but the wine is barrel-fermented and raised in
casks, with twenty percent of the oak new each vintage. The 2021 Callipyge Blanc delivers a deep
and complex bouquet of lime, green apple, fresh fig, gentle grassy notes, a lovely base of soil,
incipient notes of beeswax and a discreet framing of vanillin oak. On the palate the wine is bright,
full-bodied and youthful, with good depth at the core, fine transparency, bouncy acids and fine
focus and balance on the long and nascently complex finish. This really deserves a few years in
the cellar to blossom. It will be a very good bottle in due course"
