100% Chenin Blanc. "Eparses" is from Bellivière's oldest Coteaux du Loir vines across 6 tiny parcels. These gobelet-pruned, 80-100-year-old beauties are planted on flinty, sandy clay soils over tuffeau (soft limestone), are certified-biodynamic and harvested by hand. The bunches are direct-pressed into tank, where the juice settles overnight; it is then moved by gravity into barrel, where it ferments with native yeasts and minimal sulfur. The wine is aged in 1-3-year-old, 550-liter barrels for 18 months. The 2022 finished at a sec level of sweetness with 6.9 grams/liter of residual sugar and 3.6 grams/liter of total acidity. "Eparses" means "old scattered vines" and is usually the driest, most structured of the Bellivière Chenins.
