100% Grand Cru Chardonnay. The core of the cuvée is made up of three vineyards with very old vines in Cramant and Avize. The first is a parcel of 50 ares in Avize: part of which is 30 years old and part of which is more than century old, planted by the grandfather of the 81-year-old gentleman Patrick, Gauthier’s father, purchased the vineyard from in 1989. The second parcel, planted in 1937, is in Cramant and belonged to Gauthier’s greatgrandfather. A third parcel is on the border of Cramant and Avize: two of the most assertive terroirs in the Côte des Blancs giving very saline and mineral wines.

"The Le Brun Servenay Vieilles Vignes bottling is made entirely from chardonnay grown in three parcels that the family owns, two in Avize and one in Cramant. The oldest vines that go into this cuvée are now one hundred years of age. The vins clairs are fermented and raised in stainless steel and do not go through malolactic fermentation. The wine was disgorged in April of 2023, after fully ten years aging sur latte and was finished with a dosage of 4.5 grams per liter. It offers up a deep and precise bouquet of pear, hazelnut, brioche, complex limestone minerality, dried flowers and a gently smoky topnote. On the palate the wine is deep, full-bodied, focused and complex, with a lovely core of fruit, excellent mineral undertow, pinpoint bubbles and lovely balance on the long and vibrant finish. This is drinking beautifully today, but has decades of life ahead of it. Fine juice. "
