"The new release of Joël Falmet’s “les Parcelles” non-vintage Brut is composed from a blend of seventy percent pinot noir, twenty percent chardonnay and ten percent pinot meunier. The wine includes thirty percent reserve wines in the cuvée, from a solera Monsieur Falmet started twelve years ago. The wine is aged forty-two months sur latte prior to disgorgement and finished with a dosage of nine grams per liter. It offers a bright and complex nose of apple, nectarine, flinty limestone minerality, bread dough, raw almond and a touch of lime zest in the upper register. On the palate the wine is deep, full-bodied and mineral-driven, with a fine core, frothy mousse, bright acids and lovely focus and balance on the long, complex finish."
