Saint Véran
100% Chardonnay. Manciat's vines mainly lie in the Charnay but there are two parcels in St. Veran totalling a half hectare. The Davayé parcel ccnsists of 29-year-old, mid-slope vines with full southern exposure and the Prissé parcel of 17-year-old vines with western exposure, both planted mid-slope on crumbly limestone and clay soils. They are sustainably farmed and harvested by hand, with the two parcels vinified separately. The whole clusters are pressed directly; the juice is settled in tank for 24 hours. Fermentation is spontaneous with indigenous yeasts in small barrels, ranging from first to tenth use (10-15% new) with regular stirring of the lees. The separate wines are blended and aged in the same barrels for about 9 months before bottling with a gentle, non-sterile filtration.
