Perigee, a 50/50 blend of Renaissance Cabernet Sauvignon and Syrah, is a nod to Clos Saron’s “Black Pearl” and the wines of Domaine Trevallon. Aiming for a longer extraction time than their previous reds from this vineyard, the fruit was destemmed by hand before being crushed by foot. Co-fermented in 3⁄4 ton bins with morning and evening punchdowns and pressed after roughly 3 weeks of maceration. The wine was aged in neutral oak and bottled in July 2024. 25ppm SO2 added at bottling.
