100% Sauvignon Blanc from Sonoma Valley’s Denmark Street Vineyard, located on the east-side of the town of Sonoma where the Clouse family has farmed the site for six generations. In an effort to reduce vigor the fertile grey loam soils are left untilled and permanent cover crops are utilized. No herbicides or pesticides are employed except for elemental sulfur to combat potential mildew. The grapes were whole-cluster pressed to tank, and transferred to barrel to complete primary fermentation and MLF with ambient yeasts. The wine matured for a further 8 months in neutral French oak before bottling.
