100% Cabernet Franc. The fruit for the rosé comes from estate parcels of flinty alluvial soils mainly. The vines are on the younger side.The farming is certified-organic. All vineyard work, including harvest, is by hand. The whole clusters are gently pressed into unlined cement vats. Fermentation is spontaneous with native yeasts and without sulfur or temperature control; it lasts until the wine is dry (under 2 grams of residual sugar). The wine is aged on its fine lees in tank, goes through malolactic fermentation and is bottled in the spring with a very gentle filtration and minimal sulfur.

"The 2023 Chinon “Le Rosé” from Matthieu Baudry is a lovely wine, coming with a pale salmon color and delivering a bight and juicy bouquet of watermelon, tangerine, chalky soil tones, a hint of rhubarb and a topnote of orange peel. On the palate the wine is vibrant, full-bodied, focused and shows off a lovely core of fruit, with good soil undertow, zesty acids and fine balance on the long, focused and complex finish. Good juice. 2024-2028. 90. 2023 Chinon Rosé- Domaine Olga Raffault The 2023 Chinon Rosé from Domaine Olga Raffault is another lovely example. It comes in at 12.5 percent octane, is a pale salmon color and offers up a lovely bouquet of watermelon, blood orange, rose petals, a nice, delicate touch of spice tones and white soils. On the palate the wine is full-bodied, bright and focused, with lovely depth of fruit, good soil signature, sound framing acids and a long, well balanced and complex finish. This is a touch more vinous in style than the lovely, more ethereal Chinon Rosé from Domaine Baudry, and hence really will be best if served at table, rather than as an apéritif. A fine bottle of Rosé. 2024-2029. "
