VDF Rouge "Chat Fou"
45% Grenache/35% Cinsault/20% Clairette. Mainly from vines planted on a south-facing slope on granite soils in the warm St-Julien en St-Alban zone (in the Ardèche on the northern bank of the Ouvèze tributary of the Rhône River, at the southern edge of the northern Rhône Valley). The farming is certified-organic and harvest is by hand. In 2022, the Clairette was harvested a few days earlier than usual for freshness and macerated for a few days before being added to the partly-destemmed Cinsault; the Grenache was kept separate and only the free-run juice used due to unusually thick, tannic skins in this hot vintage. The three were blended once their short macerations were done and as usual fermented spontaneously with only native yeasts in open-top concrete tanks without sulfur. No extraction techniques are ever applied to the wine (as is true for all Texier reds). Chat Fou is aged in concrete for up to 12 months and bottled without fining or filtration and with a small amount of sulfur. It is classified as a Vin de France (it was a Côtes-du-Rhône until the 2021 vintage).
