Bourgogne Chitry
100% Chardonnay. The de Moors have 1.2 hectares of Chardonnay in two contiguous parcels in Chitry-Le-Fort, down the road from their home village of Courgis. Like their next-door Aligoté parcel, this one they began planting in 1995; together these parcels form the origin and heart of the estate. The exposure is northwest and the soils are 25-30 centimeters of clay over hard limestone rock. The farming is certifed-organic and the harvest by hand. The fruit is destemmed, gently pressed and fermented spontaneously with indigenous yeasts in tank. The wine goes through malo and is aged on its lees without bâtonnage or racking in a combination of used Burgundy barrels, 2500-liter foudres and enamel-lined steel tank for close to a year. Bottling is without fining or filtering and is the only point at which the wine receives a touch of sulfur.
