60% Minella/40% other native varieties. Eduardo pulls the white grapes for this blend from 6 different Etna sites on the north face or versante nord of Mt. Etna at elevations ranging from 550 to 900 meters. Grown on soils rich in volcanic ash, the vines average 45-50 years in age; they are hand-tended, without chemicals or fertilizers, and hand-harvested (in the first week of October for this very first vintage of the wine). The juice is fermented spontaneously in concrete tank and macerates with the skins for 5 days with no temperature control.The wine is aged for 8 months in used oak botti. Only 2000 bottles produced in this first vintage.
As a side note, Minella is only known to grow in a handful of Sicilian sub-regions and to occupy 86 hectares as of last measurement in 2000.
