The Soave Classico is 100% Garganega from Sengialta, Monte Carniga, and Campagnola. Soils are between clay-limestone and basaltic (volcanic origin). The vines are densely planted- 4,000 vines per hectare- and are an average of 25 years old. Fruit is harvested by hand at the end of September. Crushed, destemmed, fermented with native yeasts in stainless steel; the wine is kept on the lees until March.
