Notes of gardenia, ripe kiwi, papaya, green peppercorn and aged comte cheese subtlely arouse the senses. Dominating the sake are flavors of nutmeg, mushroom, toasted oat and yeast. The sake is bright, dry, lively with medium plus acidity. Full bodied on the palate, the sake coats the mouth and tastes of kiwi, white plum, yellow apple and a touch of minerality to balance all the umami in the long finish.
