100% Pinot Noir. Named for the site (which roughly translates to "little gravelly one"), Gravotte comes from a single 1.2-hectare plot of estate vines in the 35-40-year-old range, planted on particuarly stony, flinty clay-limestone soils; it is organically farmed and harvested by hand. Like all of the Tue-Boeuf reds, the wine goes through whole-cluster, open-top, semi-carbonic fermentation in vat; La Gravotte is then pressed, aged for 8 months in used Burgundy barrels and 400-liter demi-muids, and bottled unfiltered with minimal sulfur. Pure Pinot Noirs from Tue-Boeuf are rarely delicate creatures--it is high-toned in aroma, assisted by a tiny typical touch of VA (volatile acidity) on the nose, and tannic and earthy on the palate, while still being light in body. Since La Gravotte lies within the original Clos, the home estate of Tue-Boeuf in Cheverny, the full estate name features prominently at the top of the label; the wine is classified as Cheverny AOC.
