100% Diego, also known locally as Vijariego Blanco, is a vigorous, high-acid grape grown only in the Canary Islands. Fermented with native yeasts in stainless steel and aged three months in tank sur lie. Don’t be fooled by its practically clear color---this is a complex and umami-ful wine with a bright, mineral palate.

Vijariego was first described under the name Vigiriega Comun by Clemente y Rubio (1807) as a variety widespread in Andalucia. It is said to have been introduced to the Islas Canarias in teh late fifteenth or early sixteenth century...There were said to be 473 ha of Vijariego on the Islas Canarias, Spain, in 2008, and it is authorized in all the island's DOs, where is is used for both still and sparkling wines thanks to the generally high levels of acidity.
