100% Romorantin. This grape is an ancient and now rare local Loire variety, essentially saved by Cazin and a couple of other growers who fought to save their old vines as well as the variety as a whole by establishing an appellation to feature exclusively Romorantin. Cour Cheverny has only existed since 1997. Cazin's vines range widely in age, planted from 1928 up through 2003 thus far, on limestone-rich clay soils. Romorantin is naturally high in acidity and minerality; like Chenin Blanc, it can be dry, steely and zingy , though always with underlying ripe-apple or honeyed, or off-dry to sweet, but always with a solid acid-mineral core. This bottling is François's dry version (Cuv'ee Renaissance made in the best years is the botrytized, semi-dry version made from his oldest plot of vines).
The Cour-Cheverny fruit is harvested by hand and fermented in concrete tank with native yeasts. The wine is aged on its lees without stirring in neutral barrel for 4 months, retuned to concrete for a year and then bottled by gravity and without filtration.
Le Petit Chambord (on every Cazin label) is the historical name of the family property.
