‘Les Minots’ is a specific parcel within 1er Cru Vaillons with 70-year-old vines that benefit from southern exposure. It's Patrick's warmest vineyard and normally the first to be harvested. Fermented and aged in used barrels.

"The 2015 Chablis "Les Minots" comes from a lieu-dit within Vaillons and has an expressive yellow flower-scented bouquet, with hints of chalk developing in the glass. The palate is well balanced with lemon peel and touches of peach skin, the acidity well judged with hints of rosewater towards the harmonious finish that demonstrates good persistence. "

"(from a warm site in the closed end of the Vaillons valley, which Piuze says normally yields fruit with high alcohol and high acidity, although it's only 12.2% in 2015): Bright yellow. Very ripe stone fruits on the nose; more fresh apricot than peach. An easy-drinking yellow-fruit bomb whose seductive sweetness is nicely leavened by ripe acidity. Finishes with very good length. But is it as serious as the Chablis Grande Vallée?"
