La Guancha (Viña Zanata)

Founded in 1893 by Pedro Pérez, Viña Zanata is one of the oldest estates in Tenerife. Today Pedro’s grandson, Carlos, is in charge of keeping the tradition alive. Carlos farms a total of 10 hectares, divided among small plots with different altitudes and orientations. Some of his best vineyards are located at 1,400 meters above sea level, which helps bring natural high acidity and freshness to his wines. All of his vineyards are farmed organically. He harvests by hand, ferments with wild yeast, and then leaves his wines on the fine lees up to a year before bottling.
