Eliseo Carballo might be one of the most distinct growers that we have crossed paths with. Eliseo’s wine is not under the La Palma D.O.; he chooses instead to maintain the independence that allows him to create wine that adheres to his visioin–not the D.O.’s–of what his wine should be. Eliseo Carballo is generally considered the best producer of Malvasia wines in the Canary Islands. All his vineyards are farmed organically, and he does not add yeast to the wines. The wines undergo native yeast fermentation, and little if any sulfur is added at bottling. All of the wines are limited production.
